3-2-1 Cake

 

My dear friend Virginia shared this recipe that she got from her grandmother recently and I’ve been on a 3-2-1 cake kick ever since. It is super easy and perfect when you just want a little portion controlled sweet treat that takes 1 minute to make.

Ingredients

  • 1 box Angel Food cake mix
  • 1 box of any other flavor cake mix (I happened to find a box of orange flavor in my pantry)
  • Water

Directions

1) Mix the 2 boxes of cake mix together in a large Ziploc bag or container until combined well.

2) In a microwave safe mug or bowl, add 3 Tablespoons of this cake mix mixture and 2 Tablespoons of water. Mix until completely combined.

3) Microwave for 1 minute.

Voila! I topped mine with low fat vanilla ice cream and mandarin oranges. But, you can top it with anything in your refrigerator/pantry (chocolate chips, coconut, sliced almonds, cool whip, strawberries, etc). The combinations are endless, especially if you experiment with different cake flavors.

The name comes from 3 Tablespoons of cake mix, 2 Tablespoons of water, and 1 minute in the microwave – makes it easy to remember. The other great thing about this is that you’ll have enough of the cake mix mixture for several days to come. Enjoy!

    Why do you think you need to mix 2 cake mixes together? Do you think it would work with just 1 kind? Just curious.

    • Hey! You have to have the angel food cake mix because it has the egg whites, etc in it already and then you do the other box of cake mix maybe for flavoring etc? I’m not sure if you would work with just 1 kind, if it did it would be with the angel food cake mix.

        Cool..that makes sense now. I know I’ve tasted angel food cake batter before…and it’s usually gross. It tastes like it’s been fermented or something. There must be something in it that makes it work with the other cake mix and just water. Thanks!

        Have you ever done the diet coke cake? Just a can of any type diet soda mixed with a box of cake. Any box of cake will do. Nothing else added. Bake as directed on box. It’s crazy how easy it is and they usually come out very moist. You might have actually already blogged about this… but if not, it’s a cool way to switch up the flavor of the cake. Using diet sunkist with yellow cake mix, or diet cherry coke and a chocolate cake gives the cake a good flavor. So many options with soda flavors and different cake mixes.

      • I’ve actually never tried it, but I need to soon. Definitely lots of combination possibilities!
        Just thought about how to make this cake a little different, you can do 2 tablespoons of coffee instead of water and then do devils food cake mix for the flavor = chocolate mocha cake
