Cheesy Kale Chips

 

We’ve talked about kale on this blog before, but I recently rediscovered it when Publix had it on sale for a dollar. One pound of kale for a dollar? I’ve been eating these kale chips almost daily since.

This recipe uses nutritional yeast to give the chips a cheesy and nutty flavor. Nutritional yeast is an excellent source of protein, which contains all the essential amino acids and forms a complete protein. It is also rich in vitamins, especially the B-complex vitamins, and contains 15 minerals. Sounds like a good replacement to parmesan cheese!

Ingredients

  • Kale
  • Olive oil to coat
  • Nutritional Yeast
  • Sea Salt

Directions

1) Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

2) Coat kale in olive oil and sprinkle with nutritional yeast and a little bit of sea salt.

3) Bake for 10-12 minutes until leaves are a very dark green (once the leaves turn brown, they start to taste a little bitter) and crispy. You may want to check midway through and move around the leaves so they are all evenly cooked.
