No Mayo Coleslaw

  • 1 bag coleslaw
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar (I usually use red wine vinegar, but realized right when I was about to make this that I didn’t have any)
  • 6 oz crumbled feta cheese
  • 2 teaspoons sugar substitute (or you can use regular sugar)
  • Salt and Pepper to taste

1) Combine all ingredients and refrigerate until ready to serve.

(not sure what happened to this second picture)

This a great alternative to your normal coleslaw with mayo. I definitely prefer red wine vinegar over the balsamic vinegar that I used in this recipe, but it still tasted good.  Enjoy!
