I saw this recipe on pinterest (my new obsession) recently and decided that I had to try it out soon. It is perfect for when you are craving something sweet but don’t have any cakes or cookies at home and want something you can make quickly! Another great thing about this recipe is portion control – you’ll only eat/have 1 serving and won’t have leftovers to pick at the rest of the night/week. I recommend to whisk the eggs really well so you don’t end up with scrambled eggs. The cake tasted okay by itself but tasted great topped with some lowfat vanilla frozen yogurt.
- 1 egg
- 1/4 c. powdered sugar
- 1-2 Tbsp. cocoa powder (depending on how chocolatey you want it to be)
1. In mug, crack egg, add powdered sugar and cocoa powder.
2. Whisk together with a small whisk until well mixed.
3. Microwave for 50-60 seconds, until the cake is cooked through (but not overcooked!). Mine may have overcooked slightly.
I topped mine with some vanilla frozen yogurt, but you could use whip cream, chocolate chips, chocolate syrup, etc!
