- 1 1/2 cups baking mix
- 3/4 cup nonfat buttermilk
- 3 Tbsp sugar
- 1/4 tsp vanilla
- 1 cup 2% shredded cheddar cheese
- Preheat oven to 425 F.
- Stir together all ingredients just until combined.
3. Scoop into a mini muffin pan coated with cooking spray.
4. Bake 12-15 minutes, until golden.
